Menu Plan Monday: Week of December 31st, 2012 (Happy New Year)

It is a new year, it is time to get your resolutions ready! What is on your list?  Many of us add dieting to our resolutions and fail miserably at it.  It takes a lot of passion to accomplish dieting right?  How passionately do you want it?  Fact is, I did not need much passion to accomplish my weight loss goals.  Since I was already gluten free, this paleo diet was so easy.  I have been on many diets in my life.  I am a lifetime Weight Watcher!  I was so into Weight Watchers that I have retyped all of their diet materials into my computer.  Fact is, nothing worked quite as nicely as going Paleo.  At this stage I can eat the occasional bag of (not really paleo) Potato Chips and still be steady with my weight.  It was easy, I ate as much as I wanted of the allowed things.  I was never left to feel hungry and the weight still rolled off.  If you are interested, here is a great 30 day to Paleo Intro book you can look into.  As for us, I think we need to participate in the 21 Day Sugar Detox!  Way too much sugar snuck in our diets over the holidays.  I think any time you are detoxing from something there is going to be a challenge. I expect that detoxing from sugar will be EASY for us this time because when we are not cheating (say Monday through Friday) we tend to follow more of a stricter Rosedale Diet.  When we did cheat (say Saturdays and Sundays) we were leaning towards the less strict Paleo side.  So on the sugar detox we will eliminate things like winter squash, all potatoes, all fruit, cashews (which we were using in our granola), dairy.  Beans and peanuts are on the no-no sugar detox list too but we never at those anyway.

What are my new years resolutions?  I would like to tighten up this jelly belly of mine.  Yea, I am much thinner now, but not tighter.  There is where I would like to go next.  I would like to clean up my financial act this year too.  I have a few financial goals planned for myself.  Every year I set out this same financial goals and fail miserably at them.  THIS is were I would like to place my passion this year and I have a few fail safe's set in place to assure I reach these goals.

So I did not follow my meal plan last week AT ALL... LOL.  First for Christmas I made a Ham at Brunch and a Turkey at Dinner.  I ended up not having as many guests as I anticipated so the leftovers were abundant.  It was necessary for me to re-purpose these leftovers into new meals.  So, with that in mind, the next day I decided on Pub Style Ham, Potato and Cabbage with the leftover ham and hambone.  I had MORE than my share of sides so I combined gravy, dark turkey meat bits and veggies and topped with the leftover mashed potatoes and made a leftover style Shepherds Pie.  Still with a leftover turkey breast I sliced it thin and used more of that gravy (is it only me or does everybody get so much gravy from one turkey?) and served it over top of a slice of fresh baked Honey Oat Bread. What is next  after all these leftover dishes?  Leftover Turkey Chili of course!!!  I used some pantry canned goods along with some of those turkey bits and voila an incredible meal.  Next instead of soup my children asked for Turkey and dumplings.   Following the linked recipe, I boiled the turkey bones and made the stock.  Once the stock chilled overnight I dumped in all the remaining turkey.  Don't you just LOVE repurposed leftovers?   I only spent money on the first meal, the rest was free!  :-)

Gluten Free Easy Bake Oven Cake Mix Recipe

Did your son or daughter want an Easy Bake Oven for Christmas but you were reluctant to get him/her one because of the "wheat" issue? Well my brother gave one to my daughter last year along with a years supply of Gluten Free Quick Bake mixes that he ordered on Amazon. It was an incredible gift and he is the most thoughtful uncle EVER!  Alas, the year has gone by so quick and so have those mixes he purchased.

We needed a new plan. The recipe below is our new "frugal" solution to gluten free easy bake mixes.  I am using ingredients that are easy to find without special ordering.  Make the dry portions up ahead of time and store them in the snack sized zip lock bags.

2 Tablespoons Betty Crocker Gluten Free Bisquick
1 Tablespoon Sugar
1 teaspoon Hershey's Unsweetened Cocoa
3/4 teaspoon Butter, room temperature (oil works too)
2 Tablespoons Almond Milk

  • Mix flour, sugar, cocoa.  
  • Add butter and milk. Mix very well. Batter will be thick. 
  • Scoop batter into greased baking pan that comes with the toy oven. 
  • Bake for 12 to 15 minutes. 


  • We have the Ultimate Easy Bake Oven
  • We purchased the checker cake accessory pack that includes two round rings so you can make a round layer cake.
  • Double this recipe to make a sheet cake in the sheet cake pan included in the ultimate oven packaging.
  • This recipe makes a tad bit more batter than is needed.  It won't overflow but caution is needed.

The Best Homemade Low Carb Caesar Salad Dressing you will ever taste!

Here ya go, the cheat version of the classic favorite.  If I had started with Raw egg and oil, then I would not have eaten it.  LOL.  Dukes mayo is low carb so using it makes this diet friendly!

2 garlic cloves, finely minced
1 teaspoon Anchovy Paste
2 tablespoons Lemon Juice
1 teaspoon Horseradish Mustard
1 cup Mayonnaise (I am using Dukes because it is low carb)
    (make your own mayo to make it paleo)
1/4 teaspoon Salt
1/4 teaspoon Black Pepper

  • In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. 
  • Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. 
  • Taste and adjust to your liking.

Merry Christmas everyone!  Ready or now, here it comes!!!!!  We are supposed to get snow tomorrow, for the south, this is a BIG deal.  We are all so excited.  I hope its not yet another false alarm!

This is my Christmas Meal Plan, including Brunch and Dinner.  All made ahead except for the Turkey!  Don't worry, I am not here blogging on Christmas.  I put this post on autopilot.  Typed it in last week as soon as I had a clue!

Menu Plan Monday: Week of December 17th, 2012

It is Holiday Favorites over at the Gluten Free Menu Swap this week.  Do you have suggestions?  I don't!  :-)

Oh worry, worry, worry, worry.  What shall I do for Christmas Dinner?  Brunch?  Worry, worry, worry, worry.  My worry has been worse since that awful CT thing.  All those babies..... their photos are now posted on facebook all over.  I think I will type my daughters teacher a note of appreciation.  We really do love her and seriously we can be a pain sometimes I know.  Like when we were showing up every morning before school for weeks to AR test when my daughter fell behind.  I seriously dislike when folks try and talk to me before I am fully awake! LOL.  Thank your teachers today, especially those who would not beat the kids to the closet!

FYI on the dieting front.  No weight gain, no weight loss.  Still low carb.  My digestive system seems to be better than it EVER was.  Well.... since I took that radiation treatment way back when (5 years ago this January).  I simply can not believe how incredible I am now.  I had to eliminate Fructose entirely for this change to be complete, but I am okay with that.  I read somewhere that some folks have intolerance to it, perhaps I do too.  Come the new year, I plan to try and push myself a bit further, exercise perhaps?  I AM now in my "weight range" for healthy BMI.  I never officially told you guys that so here is the official announcement.  Takes me 3 weeks to loose a pound these days.  I know, I know, its better that way.  Blah! LOL.

Well we went in for a whole cow with 3 other folks and we picked it up over the weekend.  I am not sure what I thought I would get, but definitely not any of the cuts of meat I enjoy having.  I think next time I need to go in for a bigger share.  Lots of beef on the menu now!

Menu Plan Monday: Week of December 10th, 2012

It is all about Appetizers over at the GF Menu Swap and I have a few ideas for you too!  I have posted my ideas on my pinterest Christmas board because I was thinking of having a holiday party. Below here are a few low carb options for you.  (yes, I cross over to low carb sometimes, especially for the holidays).

Low Carb Cauliflower Pizza Bites
(using a muffin tin)
Peace, Love, and Low Carb's
Almond Parmesan Crusted Zucchini Crisps
I also love her buffalo Chicken Bites!
Roast Beef Wrapped Asparagus with Horseradish/Sour Cream Sauce
(just mix the two sauces and apply generously to beef)

And a Low Carb Angle on a Timeless Classic.....
Under The Big Oak Tree's Sweat and Tangy Meatballs (or all beef cocktail wieners)
can be converted to Low Carb with Reduced Sugar Ketchup,
a pinch of Chili Powder and Sugar Free Jelly

I am in no way ready for the holidays.  I mean gifts are all purchased, wrapping session planned for tomorrow thanks to my mother's help.  But as far as menu plan, cookies, and the fact that I was asked to do the tasting table for my son's holiday part has be feeling a bit overwhelmed.  Thank goodness for these themed menu plans to get my butt moving and planning.  LOL.  So at least I know some ideas for my holiday appetizers and I can make sure I have the ingredients on hand.  And now onto the menu plan:

Menu Plan Monday: Week of December 3rd, 2012

This week on the Gluten Free Menu Swap, Holiday Cookies is our theme.  Hopefully everyone will share their favorite cookie recipes and in the end we will have a collaboration of awesome cookie ideas.   Just in time for the holidays!!  Below if you click on the photo collage it will take you right to the blog post of all my cookie recipes.

These were a HUGE hit in our house.  I used Against All Grain's Almond Flour bread recipe for bread crumbs both inside and out as well as her Cream of Mushroom Soup.  Otherwise I followed my old recipe.  My husband said that he knows I made these before, but they were never as good as these! LOL.

Heather over at Celiac Family has another lovely menu plan on her blog.  She is serving her family this week: Tuscan Chicken (sounds incredible to me), Pizza on Deby Crusts she picked up to try, Fish Tacos with Guacamole, Pulled Pork Sandwiches.  She has a Basic Meringue Cookie Recipe that she makes into Christmas Trees and Snowmen (among other things).  They are absolutely adorable and you simply MUST see them. I think these cookies would be cute on top of a cupcake too!  She also is sharing her rollout Sugar Cookie recipe ~ and ya know, you can never have too many incredible sugar cookie recipes.

Paige at Not Missing a Thing's husband made them a turkey this weekend so she gets to enjoy some leftovers.  Her menu includes Homemade Turkey Noodle Soup, Gina Chicken (hey this recipe is paleo), Skillet Fiesta, and Sausage, Peppers and Onions (our fave).

Kimberlee at The Peaceful Momma shared her Simple Gluten Free menu plan with us this week.  She planned out her week complete with Breakfast, Lunch and Dinner.  Her menu includes items such as Apple Sandwiches, Chebe Bread Pizza, Quesadillas and Crockpot Chili.

Carrie at Ginger Lemon Girl is kicking off her week with a big pot of slow cooker beef stew that will fill in the blanks though-out the week!  She will make a huge tossed salad plate, toss some turkey chops in the slow cooker and serve Homemade Pizza using her Vegan Pizza Crust recipe.  I am really very interested in the Crustless Kale and Bacon Quiche she has featured on her plan for Sunday!  I wonder if it freezes well?  And last but not least, check out her No Bake Oatmeal Cookies, Spritz Cookies, and Refrigerator Pinwheel Cookies.  I never personally made pinwheel cookies before and I am certain that my baby girl will really enjoy helping me make them.

Samantha at An Awkward Girl Gets Fit is a paleo eater like us!  She has been trying to simplify things lately and has set her menu plan into categories.  Simply fill the categories in with Pinterest.  Great idea!     Samantha is serving up Tomato Basil Parmesan Soup (sounds good), Baked Fajitas, Balsamic and Onion Pot Roast, and Coconut Flour Apple Pancakes.  I am intrigued with the Grain Free Molasses Cookies and Paleo Toffee Caramels recipes she shared.

Angela over at Angela's Kitchen is joining us today with her menu plan.  She is just returning from Mixed conference so freezer cooking is saving her menu plan early this week.  She is going to pull from the freezer her Chicken with Apricot Sauce and Swedish Meatballs. Wednesday she will Make a double batch of Chicken and Broccoli Casserole and stash one in the Freezer for another time.  She completes her week with Crock Pot Roast and Veggies and Gingerbread Waffles! Angela is featuring a Christmas Cookie Countdown 2012 over at her blog.  Every Saturday and Wednesday she will share a different cookie recipe!  So far she has Gingersnaps, Pecan Tassies, Pumpkin Whoopie Pies, and Lemon Shortbread Cookies
