Menu Plan Monday: Week of September 24th, 2012

It is sweet potato week over at the Gluten Free Menu Swap and I am afraid that I really only have one good Sweet Potato Recipe of my own here on the blog.  It is a real winner tho, trust me....

Sweet Potato Biscuits
These are Gluten Free but are not Paleo
and we ONLY make them at Thanksgiving!

And here is a Paleo compliant recipe that will satisfy your sweet tooth.  Can you tell I think way too much about sweets?  LOL.  But seriously, they are using Sweet Potatoes, Avocado, Cocoa Powder and the combination sounds like a real winner.

So far so good on the health check up, I appear to be in good health.  Nothing questionable showed up on the scans.  I won't have the lab work back for at least a week tho.  According to last years records, I am down 18 1/2 pounds.  The doctor was SO impressed.  So I told you last week about how big my pants are, remember? This week I am going to SHOW you how big they are.

I put these pants on and my hubby asked me who's pants are those.  LOL, Umm mine!  Haha.  Now just imagine me trying to pin these pants up in the back.

This menu was planed by my Webelo son who has to help me plan a weeks worth of meals for his Fitness Activity Badge.  This menu represents all the meals he loves to eat.  He not only has to plan what to eat for the week but he also has explain why it is healthy or not.  He also had to keep a record of what he ate last week. Cub Scouts wants him to go to My Pyramid, but he is a Paleo AND allergy kid so that pyramid does not work for us!  None the less the task is done and this is what he picked to eat this week.

Another little thing I did this week, I added all our events to each day so you can see just how crazy busy this house is.  Tuesday and Thursdays I have to actually pack their dinner and have them eat int between events.

TBD or Leftovers ~ We usually have tons of leftovers for Sunday.  So I will either make a new meal out of them of serve them up for dinner.

    Menu Plan Monday: Week of September 17th, 2012

    It's Apple week on the Gluten Free Menu Swap

    What I want to do for you is link you to the wonderful Paleo recipes that I have found and enjoyed so far.

    So on the diet front, I was packaging up some chicken purchased in bulk while my mother sat at the kitchen table.  With chicken hands I could not constantly pull up my pants as I usually do now that I am much thinner. So I am busy with chicken and my drawers promptly fell right to the floor.  I can no longer pin said pants up and rely on them to keep me covered out in public so my mother took me directly to the local department store to purchase some new ones for my birthday.  It was there that we realized that I am now EXACTLY HALF the size I used to be in pants.  Take my old pants size and divide that in half, that is what size I am now.  WOW! LOL.  As a good friend of mine who is also dieting said, "I hope to continue this new size for the duration."

    This is my birthday week, it is also the week I get my complete check up.  By weeks end I will know once again weather or not I am still cancer free.  Sounds dramatic I know, I am sure I am fine!!!  Still, any chance I get to celebrate.....   I feel wonderful.  Especially now that I am on this diet.  The most interesting part will be what this diet done blood test wise.  Has my cholesterol gone up?  We shall see.

    Not sure what I should have for dinner, but I do know that I want My Favorite Cheesecake Recipe for Dessert.  Since I most likely will be making dinner on my birthday, I wanted it easy yet nice enough for a birthday dinner.

    Actually I made my mothers version roasted in the oven, but it is very similar to this recipe.  I shredded it up and bagged it.  So before we head out into town I'll toss in this BBQ sauce with the shreadded pork.

    To be fair I tried out one of the recipes on my mother who happily eats wheat. My mother is 70 years old and still works 7 hours a day and is dog tired at the end of the work day. As a surprise I snuck into her house and put all the ingredients for Pulled Chicken Sandwiches in her small crock pot on low.  I simply purchased a store bought rotisserie chicken, shredded it and added the rest of the ingredients into the crock pot. I made sure I set out fresh rolls and cole slaw for when she returned.

    Her comments?  It is the sort of thing that brings tears to your eyes.  She insisted that I was the sweetest, best daughter that a mother could ever ask for.  That I truly was her gift from god!  LOL.  Seriously it was not that big of a deal and it took very little effort on my part.  She really enjoyed the hot meal and was impressed at how easy it all was to do.  The cook book has 5 great ideas like this for busy mom's on the go.  I would still use the recipes and make the Gluten Free substitutes like we GF moms always do.

    Menu Plan Monday: Week of August 10th, 2012

    Welcome to the Gluten Free Menu Swap's Paleo Themed Week!

    Hello everyone and welcome to my blog!  I am hosting the Gluten Free Menu Swap this week.  This week's theme is Paleo Meals.  I have been following the Paleo diet along with my husband for a few months now and have accomplished great success in weight loss alone.  In another week my hubs and I are getting our complete physicals so we can see what this diet has done to our overall health, not just the number on the scale.

    Warning, I am sharing before and after pictures of myself!!!!  It is embarrassing to me to do so but I feel seeing is believing!!!

    I am not the "paleo" expert in our house.  My husband is in charge of all things paleo around here. In fact I put forth very little effort in learning anything about Paleo.  I have told my readers this before and I will tell you again, this was a challenge I initially was not willing to partake in.  After all, wasn't being Gluten Free hard enough?  We were already Gluten Free for a year or so because of my littlest one's allergy.  Wasn't being gluten free hard enough?  Yes, I said that twice!  It kept going though my mind over and over.  Paleo tosses a few extra things out and is a bit more of a challenge than being Gluten Free I was reluctant. Going Paleo, though, was not as hard for us as it would be for somebody who also has to kick the wheat addiction as well. Truth is, I WAS a tad bit chunky for my small frame size. And how many diets through the years did I force my poor hubby on?  So I reluctantly supported him and hopped on board a week later.  After all, I am the diet queen!  One thing I can do well is diet!!!

    What made him start out on his first ever "diet"? Here is a little excerpt from my husbands explanation on Facebook:
    "Mid May I listened to a tech podcast about a diet Steve Gibson was testing on himself and the changes it made it to his biochemistry. It interested me, so I dug into the details. My weight was going the wrong way slowly. The scientist in me saw the rationale of the diet. Eating this way is feeding the machine that we are with what it needs. 50+ lbs down, 23 more to hit the "healthy" BMI range."

    Check out this link he suggests.  Just click the link on the Paleo Pyramid and it will re-direct you.  Fitbomb covers every possible question you may have about Paleo. Fitbomb's wife, Nom Nom Paleo, has an incredible site with awesome photographs of what she eats every day as well as a smart phone app with recipes and such. Do you need a few other recommended places on the web for paleo recipes? Word of caution..... some of these links are not exclusively Paleo.

    I have used the word diet several times throughout this post so far.  But did you read how my husband explained it?  Eating this way feeds the machine with what it needs.  It is more like lifestyle change.  Now when I eat any grain or sugar source I recall in my mind The Rosedale Diet and what Dr. Rosedale says in his dietary guideline.  If I eat sugars/carbs/grains I do so consciously knowing I am doing something harmful to my health.    OK, onto the menu plan shall we?

    This is a picture of Paleo Lo Mein.  I want to call it stir fry tho because that is simply what it is.
    I love the flavor of this dish and I also love putting into it all the extra veggies I have laying around in the fridge from earlier in the week.

    Urban Poser and Against all Grain blogs both have a tomato-less sauce I want to try very soon.

    Again I am using arrowroot to thicken the juices the roast puts out.

    See, it is not really that hard to follow now is it?  You will not starve, I promise.  Fill your omelet in the morning with a half cups worth of veggies or have almond flour pancakes for breakfast.  Try some Avocado chicken salad for lunch (without the bread) or switch it up and use tuna.  Sweet tooth you say?  Well thats easy.  Bake up some of Elana's Paleo Banana Bread or make some of my very own custard base ice cream to make your own ice cream creation!


    Angela at Angela's Kitchen is not necessarily Paleo but she does have a wide range of wonderful recipes on her blog. She also has lots of recipes that could easily be modified if you were to pursue this diet.  This week the meals she is serving that could possibly be Paleo is Plum Balsamic Chicken (use Polaner All Fruit), Taco Meat served up taco bar style, Sweet and Spicy Glazed Chicken (use Polaner All Fruit and Coconut Aminos or Tamari as replacements for soy), and finally what would be my family favorite ~ Sausage and Peppers!  She also has lots of other great menu ideas for a busy mom on the go.  Head on over there and read how she manages to serve up great meals in addition to the annual back to school activities!!!

    Heather at Celiac Family, along with her husband, is trying out the Paleo Diet for a week.  That is the advice I give anybody who asks, give it a week and see how you feel!  Great news Heather!!!  She shares lots of incredible links to great Paleo dinners as well.  I may have to give a few of these a try myself.  She is serving up Lemon Dill Salmon, Angela's ^ Crock Pot Fajitas, Spaghetti Squash with Grilled Chicken, and Pulled Pork (just be careful with the BBQ Sauce).  I love the Cauliflower Rice and Summer Squash Sauté she plans to serve as a side dishes too!  Check out Heathers page and see how she makes out next week!

    Menu Plan Monday: Week of September 3rd, 2012

    I am now officially thinner than I was before I had my first child.  I put on a pair of pants the other day that I used to wear and they were actually purchased a bit on the tight side.  They now are so big the droop if I run.  LOL.  Hubs is in the 50+ weight loss category now and was declared "the Biggest Looser" at that work thing.  This diet started as a my way of supporting  him on his first ever diet.  What I learned was I had intolerances to several things, not just wheat.  I don't think I will ever consciously eat dairy, grains, legumes or sugars again!!!

    I practically stalk the guy who's job it is to discount the meat at our Walmart! LOL.  I love snatching up the New York Strips for $4 a pack.  If you notice I serve that a lot, that is why!!!

    Paleo Pizza.  There are lots of paleo pizza crusts out there on the net so I'll just search one up from a reputable bogger.  I will use my own Pizza Sauce recipe minus the sugar.  OK so Mozzarella is not paleo.  Did you ever hear of Tomato pie?  For some odd reason I used to peel the cheese off my pizza as a kid and just eat the sauce and bread.  Eventually my mom would order it just like that and called it "Tomato Pie".  It was just garlic chunks and high quality pizza sauce.  So go ahead and top your pizza with anything except the cheese.
