White Chicken Chili
1 lb chicken (equals to about 1-1/2 cups)
2 1/2 cups of water (if you are cooking fresh chicken to make stock) or 1 14 oz can chicken stock
1 clove Garlic
1 onion (about 1 cup)
1/2 of a small bag dried beans (Thats 8 ounces dried, using quick soak method) or 2 cans of white beans
1 can green chili's
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cyenne pepper
1/2 cup sour cream
1/2 cup cream
First follow directions on dried beans to reconstitute using quick method.
Meanwhile, cook chicken in enough water to cover. Cook chicken though completely.
Remove chicken and chop.
Measure remaining broth to equal 2-1/2 cups. Add water if necessary.
Add broth, chicken, beans, chili's, onion, garlic and seasonings and simmer on low for an hour.
Add cream and sour cream.
(note: I may add 1 T cornstarch to cream to thicken it a bit)
