Chili Cheese Potato Casserole


2 pounds potatoes, diced or sliced Steak Fry style


1 lb. ground beef
1/2 onion, diced
1 8 ounces tomato sauce
1 14.5oz. can diced tomatoes
1 1/2 T. chili powder
2 t. cumin
2 t. garlic powder
1 t. salt
1/4 t. cayenne pepper


1 1/3 c. milk

1 T Flour
2 c. shredded Sharp cheese
Salt and pepper, to taste

  • Spray 13x9 casserole dish with oil.
  • Place diced potatoes in a large pot with salted water. 
  • Bring to a boil and simmer for 10-15 minutes, until fork tender. 
  • Drain and pour into a greased 13×9 casserole dish.
  • In a large skillet, brown ground beef and onion. Drain. 
  • Add tomato sauce, diced tomatoes, chili powder, cumin, garlic powder, salt and cayenne pepper. 
  • Simmer for 15 minutes.
  •  While the chili simmers, combine milk and flour.  
  • Heat up mixture in a small sauce pan, stirring until mixture thickens. 
  • Stir in 1 1/2 c. cheese.  Stir until cheese is completely melted. 
  • Season to taste with salt and pepper.
  • Pour cheese sauce over the potatoes in the casserole dish.
  • Top with the chili.
  • Sprinkle the remaining 1/2 c. shredded cheese over the chili.
  • Bake at 350 degrees for 20-25 minutes, until bubbly and cheese is melted.

White Chicken Chili

1 lb chicken (equals to about 1-1/2 cups)
2 1/2 cups of water (if you are cooking fresh chicken to make stock) or 1 14 oz can chicken stock
1 clove Garlic
1 onion (about 1 cup)
1/2 of a small bag dried beans (Thats 8 ounces dried, using quick soak method) or 2 cans of white beans
1 can green chili's
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cyenne pepper
1/2 cup sour cream
1/2 cup cream

First follow directions on dried beans to reconstitute using quick method.

Meanwhile, cook chicken in enough water to cover. Cook chicken though completely.

Remove chicken and chop.

Measure remaining broth to equal 2-1/2 cups. Add water if necessary.

Add broth, chicken, beans, chili's, onion, garlic and seasonings and simmer on low for an hour.

Add cream and sour cream.

(note: I may add 1 T cornstarch to cream to thicken it a bit)

Crock Pot Roast Beef


When I volunteer to cook for Church, this is my go to meal to make.  I can secure the beef on a good sale and freeze it so it does not cost a half a years budget to serve.  It takes very little time to prepare, I just toss all the ingredients in the crock pot (or multiple crock pots if you are feeding a crowd) early in the morning.  The results are always pleasing and it even starts the gravy for you.  This is my all time favorite way to cook a roast. Roast beef really does not need much to taste fantastic.



1/4 cup Water
1 beef HerbOx Bouillon Cube
3-4 lbs Roast Beef (My favorite is Chuck)
1 Tablespoon Corn Starch mixed with a little water
1 teaspoon Brown Rice Flour

Optional:
Potato (diced large)
Carrot (diced large)
Onion (diced large)



  • Add ingredients into crock pot. 
  • Set on low for 8-10 hours.
  • One our before roast is done add cornstarch/water mixture and flour. 
  • Stir to combine.
  • Remove roast from crock pot and turn crock pot up to high if gravy is not thick enough yet.  
  • While roast is setting, tent with foil.  
  • As soon as bubbles form around the edges of the gravy in the crock pot, sauce should be thick enough to serve.
  • Enjoy!

Baked Potato Soup (GF)

Have you ever been disappointed in a potato soup the next day? Return to the refrigerator the next day only to find it way to thick. Potato has enough starch on its own to not really need the extra flour. Restaurants make their soup the night before and re-heat the next day. But how do they solve the thickness problem? Simple, leave out the flour. Give this recipe a try and taste the restaurant quality and flavor. As an added bonus, there is no gluten.

Crock Pot Baked Potato Soup

6 large potatoes
1 large onion
42 ounces (5 1/4 cups) beef or chicken broth
1 minced garlic clove
1/4 cup butter
1 teaspoon salt
1/4 teaspoon pepper
1 cup milk (or cream)
1 tablespoon Corn Starch
1 cup shredded Cheddar cheese
3 tablespoons green onion (chopped), plus extra for topping
1 cup sour cream
4 slices bacon

Combine first 7 ingredients in 5 quart slow cooker.

Cover and cook on high for six ours or on low for 8 to 10 hours. (I put mine in at 6 and add remaining ingredients at 3 for dinner. You can't really overcook this soup).

Mash mixture with potato masher until potatoes are coarsely choped and soup is slightly thickened.

Stir in milk, starch, cheese and green onions. Cook for until slightly thickened.

Serve with dollop of sour cream, bacon and sprinkle of green onion on top.

Makes 12 cups

Menu Plan Monday: Week of October 19, 2009

I changed the menu up a bit last week. Instead of the Pork Roast I made some Pork Cutlets I found already tenderized on the managers special rack. I paid $3 for 7 pork cutlets. Sundays pasta was baked ziti served at 1-ish for Lunch/Dinner.

Any reference to carbs from this point forward are Gluten Free grains and flours.

Kitchen Tip Tuesday - Quick Pancake Syrup Replacement

Today I ran out of Syrup. A complete and total disaster on Waffle day in our house. How in the world can the stock up queen run out of syrup? Well, I'll tell you how. Without realizing it, we apparently we were using both bottles. So I pulled out my make your own syrup at home recipe and do you know what? My kids claim its better than the "other kind". Cool. Super duper cool for kids who almost NEVER like anything I make.

Recipe:

1 cup Brown Sugar
3 cups Water
3 Tablespoons Corn Starch
1 teaspoon Vanilla or Maple Syrup Flavoring

Boil until Thickened.

Menu Plan Monday

I did it! I followed my menu plan all week :-). Beef Barley soup turned out to be beef and mushroom over noodles though. I forgot to add the rest of the ingredients. It was good and I still used the leftover roast so a huge frugal success. I don't think the idea of a menu plan though is that you MUST FOLLOW IT EXACTLY but rather a guideline. For the most part. I feel I do better if I follow it though.

My kids hate what I make. All the time. I have no clue how other mom's get their kids to eat whatever they make. I refuse to allow them to eat hotdogs, mac and cheese and pizza all the time though.

Monday:

D: H.Helper Lasagna (this was a great convenience for our most busy day. Kids hated it and I felt it was empty calories. I must do better but I had some so I figured make do.) Note to self: do some make ahead freezer meals!

Swiffer Wet Refill

Works for me Wednesday - Cleaning Edition

I'd like to offer up my tip for frugally replacing the fluid container for your Swiffer Wet.

1. Run bottle cap under hot water.
2. Take a pair of pliers and open cap while still under hot water gently making sure you dont damage it.
3. Refill with your favorite dollar store or frugal find cleaner.
4. Twist cap back on.

This method works great. Best of all, it does not leak. Try it.

Now if I could only find a way to adequately replace those pads. I heard of ladies using the shammies but does that really work?

Chili made from Scratch

2 pounds ground beef
1 Onion, finely diced
2 cloves Garlic, finely chopped

2 cups Beef Stock
1 Beef Bouillon
8 ounces Tomato Sauce
1 can diced tomatoes
1 Tablespoon Tomato Paste
1 can kidney beans
2 Tablespoon Onion Powder
2 teaspoons Garlic Powder
3 Tablespoons Chili Powder
2 teaspoons Cumin
1 teaspoon Paprika
1 teaspoon Salt
1/2 teaspoon Black Pepper
1/4 teaspoon ground Cayenne Pepper


  • In large Skillet add beef and cook until brown.
  • Add onion and garlic and cook until vegetables are translucent. Drain off fat and add to large stock pot.
  • Add remaining ingredients and cook over medium high heat until mixture is brought to a simmer.
  • Reduce heat and simmer for an hour to an hour and a half.
