    Have you ever heard of shelf milk? If so, can you use it in a baking recipe?

    I use "canned" milk in lots of stuff like waffles, pancakes and anything sweet as I find it to be sweeter. I also use powered milk in some recipes so why not shelf milk (the carton kind). Shelf milk reminds me of skim milk. That said, I know lots of folks who use skim milk with no trouble. Your recipe is less likely to curdle at high heat with little fat as well.

    To substitute canned milk, one cup whole milk is equivalent to 1/2 cup evaporated milk plus 1/2 cup water.
